Greek Summer Salad

(6 servings)



4 cups of cubed watermelon

2 c ups of cherry tomatoes, halved

1 diced English cucumber

1 cup pitted kalamata olives

8 oz. crumbled or cubed feta cheese



1/4 cup extra virgin olive oil

3 tablespoons balsamic vinegar

Juice of 1 lemon

2 teaspoons honey

1 cup fresh basil, chopped

2 tablespoons chopped chives

Salt and pepper



1. In a large salad bowl arrange watermelon, tomatoes, cucumber, olives, and cheese

2. In a glass jar, pour in olive oil, vinegar, lemon juice, and honey. Shake well. Add basil, chives, salt, and pepper. Shake well. 

3. Drizzle dressing over salad.
