Hubby's Favorite Asian Salmon
Ingredients For Salmon:
4 6 ounce pieces of salmon without skin
1 Tablespoon olive oil
Salt and Pepper to taste
Ingredients For Onions:
2 Yellow onions sliced
2 Tablespoons olive oil
Store-bought blackened seasoning, to taste
Ingredients For Baby Bok Choy:
2-3 portions of Baby Bok Choy, cleaned and separated
2 Tablespoons Soy Sauce
2 Tablespoons Rice Vinegar
Sesame Oil to taste
Optional: Rice or Udon Noodles
Starting with the onions about 1 hour ahead of salmon, place all ingredients in pan over low heat. Cover. Occasionally stir onions with a fork until caramel in color.
Meanwhile whisk soy sauce, rice vinegar and sesame oil in a bowl. Fill a skillet of water deep enough to cover boy choy. Bring skillet to a light boil and add bok choy. Cover skillet. Lightly boil for 4-6 mins. (Bok choy gets dark green in color) Drain bok choy and return to pan. Pour sauce over. Keep warm.
Preheat broiler to medium. Place salmon on a broiler pan and drizzle with olive oil. Sprinkle salt and pepper on top. Broil salmon to your liking. When salmon is done, you can put it on rice or udon noodles if you like. Top fish with onions and place bok choy on side. Drizzle the extra bok choy sauce over the fish. Enjoy!
