My Mahi Catch

 

Ingredients:

2 onions

4 tablespoons of olive oil

2 tablespoons of butter

Favorite blackened seasoning

 

Preparation:

Preheat oven to 400 degrees

 

Onion:

Start sautéing onions 40 minutes prior to preparing your fish. Sauté onions in 2 tablespoons of olive oil in a hot skillet with a lid. 

 

Fish:

Get your pan nice and hot and put 2 tablespoons of butter and 4 tablespoons of olive oil in a very hot skillet 

Sprinkle your favorite blackened seasoning all on top of the fillet's

When the oil and the butter are incorporated place fish blackened season side down

Cook until edges of fish start to brown

Finish fish off in a 400 degree oven for 8 minutes

 

Suggested plating:

On top of mashed potatoes topped with caramelized onions
