Salmon Bowls

Ingredients 

1/3 cup balsamic vinegar

4 tablespoons honey

2 tablespoons tamari

2 chopped garlic cloves 

1 teaspoon tyme

1 teaspoon oregano 

chili flakes

4-6 oz salmon fillets cut into bite size pieces 

1 bunch asparagus cut into 1 inch pieces 

2 tablespoons olive oil

salt and pepper 

1-2 avocado diced

2 tablespoons lemon juice 

1/2 cup chopped fresh dill and basil

1/2 cup crumbled feta 

 

  1. Preheat oven to 450 degrees 

     2. Combine balsamic vinegar, honey, tamari, garlic, thyme, oregano, and chili flakes  Boil until thicken and remove from heat    
 
      3. Toss salmon in 1/2 the sauce and arrange on a sheet pan in an even layer..Toss asparagus in olive oil and season with salt and pepper and arrange on other side of sheet pan  

      4. Bake for 10-15 minutes.  Turn on broiler to lightly caramelize the salmon.

      5. Combine avocado with 1 tablespoon of oil, lemon juice, herbs, and feta in a bowl.   

      6. Spoon asparagus and salmon over bowls of rice and toss with the extra sauce.  Top with avocado mixture
