Sheet Pan Salmon on Avocado Mousse
Ingredients for Salmon
1 tbspn. honey
2tsp. smoked paprika
2tsp. cumin
4 cloves minced garlic
Juice of 2 lemons
1 pinch crushed red pepper flakes
Pinch of salt and pepper
2 tbspn. olive oil
Ingredients for Avocado Mousse
1 avocado, halved
1/4 cup greek plain yogurt
1 cup fresh cilantro
1/2 cup fresh basil
1 jalapeño, halved and seeded
Juice of 1 lemon
1 tsp.cumin
kosher salt
Preheat oven to 425 degrees.
Place salmon on a rimmed baking sheet. Drizzle salmon with honey.
Sprinkle the salmon with paprika, cumin, garlic, lemon juice, crushed red pepper, and a pinch of the salt and pepper.
Drizzle olive oil over salmon and rub all ingredients into fish.
Place salmon in oven and roast 10-20 minutes, until desired doneness.
While fish cooks make mousse.
Place all ingredients into a blender and blend till smooth. Add 1 tbspn. of water at a time to thin out mousse as needed.
To serve, spread mousse on plate and top with salmon. If desired sprinkle on top with fresh basil.
I liKe this dish with roasted potatoes. They taste great dipped in mousse! Also, extra mousse leftover becomes salad dressing next day!
