Striped Family Salad

 Salad ingredients 

  • Salad greens of your choice
  • Vegetables of your choice i.e peppers, cucumbers, avocado 
  • Cheese of your choice 
  • Optional: croutons, olives, and sprouts 

Shallot Dressing


  • 1/3 cup of olive oil
  • 1 shallot, finely chopped
  • 2 tbspn lemon juice
  • Zest of 1 lemon
  • 2 tsp of honey
  • 2 tbspn red wine vinegar
  • Salt and pepper to taste
  • Crushed red pepper flakes to taste 


Bean Burgers


  • 1 15oz can of navy beans, rinsed and drained
  • 1 large garlic clove
  • 1 cup of grated Parmesan cheese
  • 1/4 cup of fresh basil leaves
  • 1/2 cup of panko bread crumbs 
  • 1 large egg



  1. In a food processor, pulse basil and garlic until finely chopped 
  2. Add Parmesan cheese, 1/2 cup beans, 1/4 cup panko crumbs, egg, salt and pepper until smooth
  3. In a bowl, mash the rest of the beans until coarsely chopped
  4. Add the puréed beans with the chopped beans 
  5. Spread 1/4 cup of panko crumbs on a plate 
  6. Shape beans into patties with wet hands 
  7. Coat each patty in the panko crumbs 
  8. Place on plate and refrigerate for at least 10 mins
  9. Heat olive oil in a large skillet and cook until brown on both sides
