Striped Family Salad
Salad ingredients
- Salad greens of your choice
- Vegetables of your choice i.e peppers, cucumbers, avocado
- Cheese of your choice
- Optional: croutons, olives, and sprouts
Shallot Dressing
Ingredients:
- 1/3 cup of olive oil
- 1 shallot, finely chopped
- 2 tbspn lemon juice
- Zest of 1 lemon
- 2 tsp of honey
- 2 tbspn red wine vinegar
- Salt and pepper to taste
- Crushed red pepper flakes to taste
Bean Burgers
Ingredients:
- 1 15oz can of navy beans, rinsed and drained
- 1 large garlic clove
- 1 cup of grated Parmesan cheese
- 1/4 cup of fresh basil leaves
- 1/2 cup of panko bread crumbs
- 1 large egg
Preparation:
- In a food processor, pulse basil and garlic until finely chopped
- Add Parmesan cheese, 1/2 cup beans, 1/4 cup panko crumbs, egg, salt and pepper until smooth
- In a bowl, mash the rest of the beans until coarsely chopped
- Add the puréed beans with the chopped beans
- Spread 1/4 cup of panko crumbs on a plate
- Shape beans into patties with wet hands
- Coat each patty in the panko crumbs
- Place on plate and refrigerate for at least 10 mins
- Heat olive oil in a large skillet and cook until brown on both sides
