White Beans Ragu

Ingredients
2 garlic cloves
1/4 tsp red pepper flakes
2Tbsn olive oil
2 chopped plum tomatoes
1 Rosemary sprig
2 14 oz. cans of cannellini beans, drained and rinsed
1/2 cup water
Chopped parsley to taste
1/2 tsp. Salt
Grated Parmesan cheese to taste

This great side dish is wonderful on a crispy piece of toasted French bread! Or sometimes I love some on a piece of grilled fish or chicken. Your choice!
Makes a fun appetizer too!
Smash the garlic cloves and place in a skillet with the red pepper flakes and olive oil. Cook over medium heat for 1 minute. Add the tomatoes and rosemary sprig and cook for 2 minutes. Add the beans and cook smashing some down with the back off a wooden spoon. Cook for 5 minutes and then remove the rosemary. Stir in the water and some chopped parsley and salt. Sprinkle the top with the Parmesan cheese and broil for 2 minutes. Enjoy!
